Orzo Pasta With Black Beans and Roasted Red Peppers
This is a summer salad I enjoy making when I have close to nothing in the kitchen to cook with. Look in your pantry, grab a bowl, and voila! You have a salad.






Preparation Time: 15 minutes
Cooking Time: ~20 minutes
Serving Size: 4-6 people

1 cup of orzo pasta
1 can 15oz. black beans
2 roasted red peppers
1 cup chopped parsley
1 tbsp roasted or chopped garlic
1 medium sweet onion
Salt and pepper to taste

1. Cook the orzo pasta.

2. Rinse and drain the beans.

3. Chop the roasted red peppers, parsley, and sweet onion.

4. In a large bowl, add all ingredients. Add the vinaigrette displayed below. Mix well.

5. Chill.

Vinaigrette with Thyme
This dressing goes well with a bean salad or over cooked/roasted vegetables.

Preparation Time: 10 minutes
Serving Size: 3/4 cup dressing

1/2 cup virgin olive oil
1/4 cup red wine vinigar
1/2 tbsp chopped thyme (or dry)
1/2 tbsp roasted or chopped garlic
Salt and pepper to taste

1. In a small bowl, add all ingredients. Mix well.
