Cod Cakes

Cod Cakes
This way of preparing cod was an easy way to introduce my young children to fish, especially with the dill sauce and fresh veggies.

Preparation Time: 20 minutes
Cooking Time: 30 minutes
Serving Size: 4-6 people

1/2 lb cod fish
2 tbsp chopped parsley
1 tbsp chopped thyme
1 tsp chili flakes
1 tbsp roasted garlic in olive oil or 2 cloves chopped garlic
1 tsp baking powder combined with 1/2 cup flour
2 eggs
Salt to taste
Pepper to taste
Olive Oil

1. Cut cod in cubes.

2. In a large bowl, combine cubed cod, parsley, thyme, chili flakes, and garlic. Add salt and pepper to taste. Mix well.

3. Add eggs and flour/baking powder combination to the bowl. Mix well.

4. In a large hot pan, add olive oil and fry 2 heaping spoonfuls of cod cake batter and cook for 5 minutes on each side.

This recipe goes well with a dill sauce.
