Chick Pea Salad With Spearmint Leaves

Chick Pea Salad with Spearmint Leaves 
This recipe came from desperation when I had nothing to make. I often make this when I ask myself, "What can I use to make a salad?"






Preparation Time: 30 minutes
Serving Size: 4-6 people

1 can 15oz chick peas 
1 large red onion 
1 cup chopped parsley
1/2 tbsp roasted chopped garlic
1/2 cup spearmint leaves 
Salt and pepper to taste

1. Drain the chick peas.

2. Slice the large red onion into slivers.

3. Cut the spearmint leaves into slivers.

4. In a large bowl, add all the ingredients. Mix well.

5. Add the vinaigrette listed below. Mix well.

6. Chill for 30 minutes.


Lemon Vinaigrette
This dressing can be used in a bean or mixed greens salad.

Preparation Time: 10 minutes
Serving Size: 3/4 c dressing

1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
1/2 tbsp roasted or crushed garlic
1/2 tsp chili flakes (optional)
1 lemon rind and juice
Salt and pepper to taste

1. In a small bowl, add all the ingredients. Mix well.

  1. I absolutely love chickpeas! This salad looks great, and I think I would even add some peppers to mine, for a little spice. Thanks for the recipe!

      I'm glad you like the recipe! Peppers are a great idea! Remember, you can also put chili flakes in the Lemon Vinaigrette for some spice too! Thanks for the suggestion and please feel free to continue suggesting alternative options!
